Get Ready and Celebrate the Holidays at the Bayview School of Cooking!

We have festive and instructive classes for every age!

Monday, December 2, 6:00-8:30pm
Hands-On Italian Christmas Cookies
Christine Ciancetta
Celebrate the start of the holiday season with a festive hands-on cookie making class! Christine introduces the very best Italian Christmas cookies that are perfect for company or gift-giving.  She’ll offer detailed instruction as you make the crowd-pleasing Pignoli Cookies, made with almond paste and pine nuts, “Peach” Cookies, a fancy vanilla and peach preserve sandwich-style cookie, artfully decorated with peach liqueur and sugar and topped with candied mint leaves, and Ricotta-Lemon Drop Cookies, a tender, moist holiday favorite topped with frosting and sprinkles. Take some cookies home after you enjoy the cookies in class, along with a glass of Prosecco!  $50

    Tuesday, December 3, 6:00-8:30pm

A Christmas Carol Feast

Join Chef Brad as he treats you to an authentic Dickens’ Christmas menu that you’ll feel confident serving your guests as the holidays come upon us. He’ll start with an appetizer of Baked Apple Stuffed with Beets and Squash, finished with Fresh Goat Cheese.  The soup course is a creamy, Oyster Stew and the spectacular main course is a Standing Beef Rib Roast served with Colcannon Potatoes, Creamy Leeks and Roasted Brussels Sprouts. And of course, no Dickens Christmas would be complete without a Figgy Pudding with Hard Sauce. Learn to master this traditional English feast that even Scrooge couldn’t resist!  Complementary wine pairing. $55

Homemade Candy Bars for Gift-Giving

What’s the next big thing?  Homemade candy bars!  Caroline will take you step-by-step to create these lovely masterpieces that you can proudly give as gifts to friends and family. She’ll even give you stylish tips on how to package up Dark Chocolate-Dipped Almond Coconut Bars, Peanut Butter and Chocolate Cups, and Maple-Nut Logs. As components of these treats, you’ll also learn to make Vanilla Bean Fudge, Fondant, and Milk-Chocolate Caramel, as well as receiving extra candy bar recipes that utilize these same basic components.  Give something a little different this year!  $45

Santa’s Christmas Cookie Workshop

Come and visit Linda and her “elves” in their Christmas cookie workshop! With their help, you’ll get to make Christmas Candy Caroler Cookies and Peanut Butter Santa and Reindeer Cookies, plus discover fun ways to package them all up in case there are any left over and you want to give them to someone special! $30

Its Christmas time and that means cookies—to eat and to share! Linda and her trusty helpers will guide you in making Almond Toffee Bars, Melting Snowman, and the cutest Peanut Butter Santa and Reindeer Cookies.  You’ll also learn ways to package up your creations so you can give them away to friends and family! $35

Gingerbread Houses-A Parent-Child Workshop

Have you ever wanted to make a gingerbread house but were intimidated by the prospect? Have all the fun of assembling and decorating without the hassle of measuring dimensions and baking. Kids, grab a parent or a favorite adult for an afternoon of creativity and fun.  Linda and her elves will have the building materials ready—all you have to do is bring your imagination! We’ll serve hot chocolate when we snack on our gingerbread leftovers. $50 for one adult and one child.

    Tuesday, December 10, 6:00-8:30pm

Baklava for the Holidays-A Hands-On Class
Lee Ann Ufford
Sweet, golden, and flaky Greek Baklava, filled with nuts, is perfect for gifts or entertaining.  Lee Ann’s intensive instruction guides students through the entire process in this made from scratch hands-on class.  Students will assemble their own 9×11 inch baking pan of this treat to take home, along with instructions on baking, freezing and serving.  You’ll feel ready for the holidays with this classic, ready to serve!  A batch of Spiced Cranberry Tea will be served with our samples! $50

Wonderful Waldorf

LeanneWhen it comes to Thanksgiving salads, people tend to be from two camps: the Jello salad with fruit or the Waldorf Apple Salad. I suppose that there are those too who like a green salad, but I suspect that they are in the minority—those greens just take up too much room on the plate. I am in the Waldorf camp. The Waldorf Salad goes well with all the other foods of Thanksgiving and doesn’t melt into everything

else. My sister Debbie originally brought this salad to our family’s turkey day and it’s been a favorite of everyone’s ever since. It’s light but still full of flavor and the addition of cumin makes it just a little bit savory. It’s easily doubled for those big events.

Thanksgiving Waldorf Salad
⅓ cup light mayonnaise
⅓ cup plain nonfat yogurt
2 tablespoons fresh lemon juice
2 teaspoons grated or finely chopped fresh ginger
¼ teaspoon cumin
4 Granny Smith apples
1 large rib celery, finely diced
½ cup dried cranberries
¼ golden raisins
2 tablespoons finely chopped fresh parsley
¼ cup chopped pecans or walnuts

Combine mayonnaise, yogurt, lemon juice, ginger, and cumin. Core the apples and cut into a ½-inch dice. Combine with the celery, cranberries, raisins and parsley. Add the dressing, stirring to coat everything. Cover and refrigerate. Just before serving, stir in the pecans or walnuts.

Winter is coming…

Leanne along with Hanukkah, Christmas, Kwanzaa, New Year’s, maybe snow, Super Bowl, Valentine’s Day and all the memorable meals that will accompany these events. Can you tell that I tend to think of everything in terms of food?

The tastes, smells and sight of food make lasting memories and memories establish traditions. And what a huge part of life traditions are! At BSC we love to celebrate tradition with classes that help

you create those memories. Just take a look at our December line-up and you’ll see what I mean.

i-5kwjpAs usual, we have way too many events planned to mention here, but let me mention just a couple. First, don’t you dare miss Taste the Holiday Spirit on Saturday, December 14th this year at Bayview!  It just keeps on getting better and better, so stop by to see what all the talk is about! It’s free and you can indulge in holiday samples galore!

Second, have you watched the Food Network’s Cupcake Wars? Recently a local cupcakery – Miss Moffett’s Mystical Cupcakes – competed and did a great job representing Olympia. Take a peek on February 6th to see what’s coming!

BSC is also celebrating the local food scene and by local, I mean a half an hour south of Olympia. I’m delighted by the wonderful dining options found in the smaller towns of Centralia and Chehalis. In recognition, we’re featuring four charming restaurants and one brewery – all noted with that adapted I-5 sign above. (BTW, the cupcakery I mentioned before also has a location in Centralia so that makes six special classes from Lewis County!)
