Modern Scottish Fare

Instructor: Leanne Willard
Leanne is proud of both her Irish and Scottish heritage but the Irish had their day in March and now the Scottish will have their day. Discover that Scottish cooking isn’t all about the haggis with a modern menu that begins with a Gratin of Smoked Fish and Crab with Chili and Cheese and one of Scotland’s favorite chicken soups, Cock-a-Leekie. More tradition-inspired fare includes Scotch Broth Salad with barley, kale, lamb, onion and mint and Scottish Beef Steak and Mushroom Pie. Rhubarb and Cointreau Cranchan, a sweet concoction of rhubarb, cream and oats, rounds out the meal. Add a Scottish celebration to your table!
